Description
Zuppa Toscana is a rich and creamy Italian soup that combines spicy Italian sausage, crispy bacon, hearty potatoes, and nutritious kale in a savory chicken broth, finished with a swirl of heavy cream. This comforting bowl is a favorite for its robust flavors and satisfying warmth.
Ingredients
Scale
- 1 lb spicy Italian sausage, casing removed
- 4 slices of bacon, chopped
- 1 large onion, diced
- 3 garlic cloves, minced
- 4 large potatoes, sliced into half-moons
- 4 cups chicken broth
- 1 cup heavy cream
- 2 cups kale, stems removed and leaves torn
- Salt and pepper to taste
- Red pepper flakes (optional, for extra heat)
Instructions
- Cook the Meats: In a large pot over medium heat, cook the sausage and bacon until browned. Remove the meats, leaving the drippings.
- Sauté Vegetables: In the same pot, sauté the onion until translucent. Add garlic and cook for another minute.
- Simmer: Add potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender.
- Combine: Return the meats to the pot. Stir in kale and cook until wilted.
- Finish: Lower the heat, stir in heavy cream, and season with salt, pepper, and optional red pepper flakes. Heat through without boiling.
Notes
- Substitute spinach for kale if preferred.
- Use mild sausage and omit red pepper flakes for a less spicy version.
- For a lighter version, replace heavy cream with half-and-half or whole milk.
