Ingredients

  • 1 lb spicy Italian sausage, casing removed
  • 4 slices of bacon, chopped
  • 1 large onion, diced
  • 3 garlic cloves, minced
  • 4 large potatoes, sliced into half-moons
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 2 cups kale, stems removed and leaves torn
  • Salt and pepper to taste
  • Red pepper flakes (optional, for extra heat)

Instructions

  1. Cook the Meats: In a large pot over medium heat, cook the sausage and bacon until browned. Remove the meats, leaving the drippings.
  2. Sauté Vegetables: In the same pot, sauté the onion until translucent. Add garlic and cook for another minute.
  3. Simmer: Add potatoes and chicken broth. Bring to a boil, then simmer until potatoes are tender.
  4. Combine: Return the meats to the pot. Stir in kale and cook until wilted.
  5. Finish: Lower the heat, stir in heavy cream, and season with salt, pepper, and optional red pepper flakes. Heat through without boiling.

Notes

  • Substitute spinach for kale if preferred.
  • Use mild sausage and omit red pepper flakes for a less spicy version.
