Instructions

- Add the eggs, one at a time, beating well after each addition.
- In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Gradually add the dry ingredients to the sweet potato mixture, mixing until just combined. Stir in the vanilla extract.
