Instructions

  1. Preheat your oven to 350°F (175°C). Grease and flour two 9-inch round cake pans.
  2. In a large mixing bowl, beat together the mashed sweet potatoes, granulated sugar, brown sugar, and vegetable oil until well combined.
  3. Add the eggs, one at a time, beating well after each addition.
  4. In a separate bowl, sift together the flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
  5. Gradually add the dry ingredients to the sweet potato mixture, mixing until just combined. Stir in the vanilla extract.
  6. Divide the batter evenly between the prepared cake pans and smooth the tops with a spatula.
