- Preheat the oven to 400°F (200°C).
- Wash and scrub the sweet potatoes, then pierce them several times with a fork.
- Rub each sweet potato with olive oil and sprinkle with a pinch of salt. Place on a baking sheet and roast for 45-50 minutes, or until tender when pierced with a fork.
- While the sweet potatoes are roasting, warm the shredded roast turkey in a skillet over low heat. Season with cinnamon, salt, and pepper.
- Once the sweet potatoes are cooked, remove them from the oven and let them cool slightly. Cut a slit down the middle of each potato and gently fluff the inside with a fork.
- Stuff each sweet potato with the shredded turkey and top with cranberry sauce.
- Garnish with fresh herbs, if desired, and serve warm.
