Ingredients
5 sweet potatoes, peeled and sliced
½ cup packed brown sugar
¼ cup margarine or butter
3 tablespoons orange juice
1 pinch ground cinnamon
1 (10.5 ounce) package miniature marshmallows
Instructions
Preheat Oven: Gather all ingredients, and preheat the oven to 350 degrees F (175 degrees C).
Boil Sweet Potatoes: Place sweet potatoes in a large saucepan with enough water to cover. Bring to a boil and cook until tender, about 15 minutes. Remove from heat, drain, and mash.
Prepare Mixture: Place mashed sweet potatoes in a large bowl. Add brown sugar, margarine, orange juice, and cinnamon; mix with an electric mixer until blended.
Assemble Casserole: Spread the sweet potato mixture evenly into a 9×13-inch baking dish. Sprinkle marshmallows over the top.
