Ingredients
2 large English cucumbers, spiralized
1 cup cherry tomatoes, halved
½ cup Kalamata olives, pitted and sliced
½ red onion, thinly sliced
⅓ cup crumbled feta cheese
2 tbsp fresh parsley, chopped
2 tbsp fresh mint leaves, chopped
- Dressing:
⅓ cup olive oil
2 tsp fresh lemon juice
1 tsp fresh oregano, minced
1 garlic clove, grated or pressed
Salt and pepper, to taste
Instructions
Prepare the Dressing:
In a small bowl, whisk together olive oil, lemon juice, red wine vinegar, minced oregano, and grated garlic clove. Season with salt and pepper to taste.
Spiralize the Cucumbers:
Using a spiralizer, spiralize the English cucumbers into long strands. Place them in a large salad bowl.
Assemble the Salad:
Add cherry tomatoes, sliced olives, thinly sliced red onion, crumbled feta cheese, chopped parsley, and chopped mint leaves to the bowl with the spiralized cucumbers.
Dress the Salad:
Pour the prepared dressing over the salad ingredients in the bowl.
Toss and Serve:
Gently toss the salad until everything is evenly coated with the dressing.
Notes
- To prevent the salad from becoming watery, let the spiralized cucumbers sit with a little salt for 10 minutes, then pat dry with paper towels before mixing with other ingredients.
