- 1 lb ground beef (or turkey)
- 1 onion, diced
- 2 cans diced tomatoes
- 1 can black beans, drained and rinsed
- 1 can kidney beans, drained and rinsed
- 1 can corn, drained
- 1 packet taco seasoning
- 1 packet ranch seasoning
- 3 cups beef or chicken broth
- Optional toppings: shredded cheese, sour cream, avocado, jalapeños, tortilla chips
Instructions
- Brown the ground beef in a skillet over medium heat. Drain any excess fat.
- In a slow cooker, add the browned beef, diced onions, tomatoes, beans, corn, taco seasoning, ranch seasoning, and broth. Stir to combine.
- Cook on low for 6-8 hours or on high for 3-4 hours.
- Serve hot with your favorite taco toppings like cheese, sour cream, avocado, and tortilla chips.
Notes
- You can substitute the ground beef with ground turkey or even make it vegetarian by omitting the meat and adding extra beans or vegetables.
- Adjust the spice level by adding more or less taco seasoning or adding jalapeños for extra heat.
- The soup can be stored in the refrigerator for up to 3 days or frozen for longer storage.
