Description

A hearty and flavorful soup with all the bold flavors of a classic taco, made easy in a slow cooker. This soup is packed with ground beef, beans, corn, and tomatoes, all simmered with taco seasonings for a delicious and comforting meal.


Ingredients

  • 1 lb ground beef (or turkey)
  • 1 onion, diced
  • 2 cans diced tomatoes
  • 1 can black beans, drained and rinsed
  • 1 can kidney beans, drained and rinsed
  • 1 can corn, drained
  • 1 packet taco seasoning
  • 1 packet ranch seasoning
  • 3 cups beef or chicken broth
  • Optional toppings: shredded cheese, sour cream, avocado, jalapeños, tortilla chips

Instructions

  • Brown the ground beef in a skillet over medium heat. Drain any excess fat.
  • In a slow cooker, add the browned beef, diced onions, tomatoes, beans, corn, taco seasoning, ranch seasoning, and broth. Stir to combine.
  • Cook on low for 6-8 hours or on high for 3-4 hours.
  • Serve hot with your favorite taco toppings like cheese, sour cream, avocado, and tortilla chips.

Notes

  • You can substitute the ground beef with ground turkey or even make it vegetarian by omitting the meat and adding extra beans or vegetables.
  • Adjust the spice level by adding more or less taco seasoning or adding jalapeños for extra heat.
  • The soup can be stored in the refrigerator for up to 3 days or frozen for longer storage.
