Red Velvet Strawberry Cheesecake combines the rich flavor of red velvet cake with the creamy indulgence of cheesecake, all topped with fresh strawberries. This dessert is perfect for celebrations and special occasions.

Ingredients

Scale
  • For the red velvet cake layer:
    • 1 cup all-purpose flour
    • 2 tablespoons cocoa powder
    • 1/2 teaspoon baking soda
    • 1/4 teaspoon salt
    • 1/2 cup unsalted butter, softened
    • 3/4 cup granulated sugar
    • 1 large egg
    • 1 teaspoon vanilla extract
    • 1/2 cup buttermilk
    • 1 tablespoon red food coloring
  • For the cheesecake layer:
    • 16 oz cream cheese, softened
    • 3/4 cup granulated sugar
    • 2 large eggs
    • 1 teaspoon vanilla extract
  • For the topping:
    • 1 cup fresh strawberries, sliced
    • Whipped cream (optional)

Instructions

  • Prepare the Red Velvet Layer: Preheat oven to 350°F (175°C). Grease and line a springform pan. In a bowl, whisk together flour, cocoa powder, baking soda, and salt. In a separate bowl, cream butter and sugar, then beat in the egg, vanilla, buttermilk, and food coloring. Add dry ingredients to wet and mix until combined. Pour into the prepared pan and bake for 20-25 minutes. Let it cool.
  • Make the Cheesecake Layer: Beat cream cheese and sugar until smooth. Add eggs one at a time, then vanilla. Pour the cheesecake batter over the cooled red velvet cake layer in the same springform pan.
  • Bake the Cheesecake: Bake for 45-50 minutes, or until the cheesecake is set. Let it cool at room temperature, then refrigerate for at least 4 hours or overnight.
  • Top with Strawberries: Once the cheesecake is fully chilled, arrange the fresh strawberries on top. Optionally, garnish with whipped cream.
  • Serve and Enjoy: Slice and serve this deliciously layered cheesecake chilled.

Notes

  • To avoid cracks in the cheesecake, bake it in a water bath and cool gradually.
  • Feel free to swap out strawberries for other berries or fruits, depending on your preference.
