Mushroom Rice

Description

Mushroom Rice is a flavorful dish that combines earthy mushrooms with fluffy rice, enhanced with aromatic spices and herbs. Perfect as a side dish or a satisfying main course, this dish offers a delightful balance of flavors and textures.

 


Ingredients

– 2-3 tablespoons olive oil, separated
– 30 grams butter (2 tablespoons)
– 750 grams mushrooms, sliced 3-5 mm thick (1.5 lb)
– 2 garlic cloves, minced
– 1 small onion, finely diced
– 1 1/2 cups long-grain rice, uncooked
– 2 1/4 cups vegetable stock or broth (or chicken)
– 1 1/2 – 2 cups green onions, sliced
– Optional: More butter to stir through

Instructions

1. Heat 2 tablespoons of olive oil in a large pot over high heat. Add half of the mushrooms and cook for 5 minutes until golden. Season with salt and pepper, then remove and set aside. (These mushrooms will be added back at the end.)
2. If the pot is dry, add another 1/2 – 1 tablespoon of olive oil and the butter. Once the butter is melted, add the onions and garlic. Cook for 30 seconds, then add the remaining mushrooms.
3. Cook the mushrooms for 5 minutes or until lightly browned. The base of the pot may also brown.
4. Add the rice to the pot along with a splash of broth. Mix well so that the browned bits on the bottom of the pot mix into the liquid.
5. Once the base of the pot is clean, add the remaining vegetable stock or broth. Place the lid on the pot, bring it to a simmer, and then turn the heat down to medium-low.
6. Cook for 15 minutes or until there is no residual liquid. You can tilt the pot to check.
7. Remove the pot from the stove and take off the lid. Quickly toss in the reserved mushrooms and green onions, then put the lid back on. Leave it for 10 minutes. (Do not skip this step!)
8. Fluff the rice using a fork or wooden spoon. Optionally, stir through more butter.
9. Serve the Mushroom Rice as a delicious side dish or as a main course.

Notes

– Ensure to rinse the rice before cooking to remove excess starch.

– Use a variety of mushrooms for depth of flavor.

– Customize with additional vegetables or protein as desired.
