Description

Irish Nachos are a delightful alternative to traditional nachos, using crispy seasoned potato slices instead of tortilla chips, layered with melted cheese, bacon, and a variety of toppings such as green onions and jalapeños. This dish is perfect for sharing and is popular as both an appetizer and a casual meal.


Ingredients

3-4 large russet potatoes
Olive oil
Salt and pepper, to taste
2 cups cheddar cheese, shredded
Crisp bacon, chopped
Sour cream or crema
Chives or green onions, chopped

Instructions

1. Preparing Potatoes:
Carefully slice the potato thin with a knife, about ⅛ inch thick, or use a mandolin.
Soak the potato slices in a large bowl filled with cold water for 30-45 minutes.
Preheat the oven to 400°F (200°C).
2. Baking Potatoes:
Remove the potatoes from the water and pat them dry with a clean kitchen towel or paper towel.
Place them in a single layer on 2 baking sheets.
Drizzle with about ¼ cup of olive oil and season with salt and pepper.
Toss the potatoes until evenly coated and redistribute them on the baking sheets in a single layer.
Bake for 40-45 minutes, flipping the slices over every 10-15 minutes to ensure even browning.
Remove crisp slices and drain on paper towels. Let cool for 10 minutes.
3. Nacho Assembly:
Spray a sheet pan with pan spray and spread out all the crisp potatoes.
Sprinkle generously with cheddar cheese and bake for 2-3 minutes at 400°F (200°C) until cheese is melted.
Monitor closely to prevent overbaking.
Once out of the oven, drizzle with sour cream or crema (you can thin it with a little milk if desired).
Sprinkle with chopped bacon and chives.
