Ingredients

4 salmon fillets
1/4 cup honey
1/4 cup pineapple juice
1/2 cup fresh pineapple chunks
2 tablespoons soy sauce
2 cloves garlic, minced
1 tablespoon olive oil
1/2 teaspoon red pepper flakes (optional, for a bit of heat)
Salt and pepper to taste
Fresh cilantro, chopped (for garnish)
Lemon wedges (for serving)

Instructions

Prepare the Marinade:
In a bowl, whisk together the honey, pineapple juice, soy sauce, minced garlic, and red pepper flakes. Set aside.
Cook the Salmon:
Season the salmon fillets with salt and pepper.
Heat olive oil in a large skillet over medium heat. Add the salmon fillets, skin side down, and cook for 4-5 minutes until the skin is crispy. Flip and cook for an additional 3-4 minutes until cooked through.
Add the Pineapple and Sauce:
Pour the honey pineapple marinade over the salmon, and add the fresh pineapple chunks to the skillet. Cook for 3-5 minutes, spooning the sauce over the salmon as it thickens.
