Ingredients
1 pound ground beef
1 cup diced carrots
2 cups mashed potatoes
1 cup diced onions
1 cup corn kernels
1 cup diced tomatoes
2 tablespoons tomato paste
2 cloves garlic, minced
2 teaspoons Worcestershire sauce
1 teaspoon dried thyme
1 teaspoon dried rosemary
1 teaspoon salt
1/2 teaspoon black pepper
2 tablespoons olive oil
1/2 cup milk
2 tablespoons butter
Instructions
Preheat oven: Preheat the oven to 375°F (190°C). Grease a baking dish with butter or cooking spray.
Cook ground beef: In a large skillet, heat olive oil over medium heat. Add diced onions and minced garlic, and cook until softened. Add ground beef and cook until browned, breaking it up with a spoon.
Add vegetables: Stir in diced carrots, corn kernels, diced tomatoes, tomato paste, Worcestershire sauce, dried thyme, dried rosemary, salt, and black pepper. Cook for another 5 minutes, until vegetables are slightly softened.
Prepare mashed potatoes: While the beef mixture is cooking, prepare mashed potatoes. Boil peeled and diced potatoes until fork-tender. Drain and mash with butter and milk until smooth. Season with salt and pepper to taste.
Assemble shepherd’s pie: Transfer the beef and vegetable mixture into the greased baking dish. Spread the mashed potatoes evenly over the top.
Bake: Place the baking dish in the preheated oven and bake for 30 minutes, or until the mashed potatoes are golden brown and the filling is bubbling.
