Description

Ingredients

  • 1/4 cup milk (any kind)
  • 1/2 cup spinach, chopped
  • 1/2 cup bell peppers, diced
  • 1/4 cup onions, diced
  • 1/2 cup shredded cheese (optional)
  • Salt and pepper, to taste

Instructions

  1. Preheat oven to 350°F (175°C) and grease a muffin tin.
  2. In a large bowl, whisk together eggs and milk. Stir in spinach, bell peppers, onions, and cheese. Season with salt and pepper.
  3. Pour the mixture into the muffin tin, filling each cup about 3/4 full.
  4. Bake for 20-25 minutes, or until the muffins are set and lightly golden on top.
  5. Let cool for a few minutes before removing from the tin. Serve warm.
