Description
Gulab Jamun is a popular Indian dessert consisting of soft, spongy balls made from milk solids (khoya) and flour, deep-fried and then soaked in a sweet, fragrant syrup often flavored with cardamom, rose water, or saffron. This dessert is a staple at festive occasions and is cherished for its rich, sweet flavor.
Ingredients
- For Sugar Syrup:
2 cups Sugar (400g)
2 cups Water
1 1/2 tsp Lemon Juice
4-5 Green Cardamom Pods
- For Gulab Jamun Dough:
2 cups Dry Whole Milk (200g)
1 tsp Baking Powder
4 tbsp All-Purpose Flour (45g)
1/4 tsp Green Cardamom Powder
2 tbsp Clarified Butter (Ghee)
1/2 cup + 2 tbsp Milk
- For Frying:
Ghee or Vegetable Oil (for deep frying)
Instructions
Prepare Sugar Syrup: Boil sugar, water, lemon juice, and cardamom pods until slightly sticky. Remove cardamom pods.
Prepare Dough: Mix dry whole milk, baking powder, flour, cardamom powder, ghee, and milk to form a soft dough. Let it rest.
Shape and Fry: Divide dough, shape into balls, fry in heated oil until golden brown.
Soak: Drop fried balls into warm sugar syrup for 1-2 hours. Enjoy
Notes
- Ensure the oil is not too hot, as the jamuns will brown on the outside but remain uncooked inside.
- The balls expand in size when fried and soaked, so make smaller sized balls to start.
- If the dough is too dry, add a little milk. If too sticky, add a bit more flour.
