Ingredients
1 Tablespoon olive oil
1 small onion, finely chopped
2 ribs celery, finely chopped
2 Tablespoons fresh ginger, finely chopped
6 cloves garlic, minced
1 teaspoon turmeric
6 cups low sodium chicken broth
1 – 1 1/2 pounds chicken breasts
2 Tablespoons soy sauce
1/2 teaspoon black pepper
3 cups cooked jasmine rice

Instructions
Heat the Oil:
In a large pot, heat 1 tablespoon of olive oil over medium heat.
Sauté Vegetables:
Add the chopped onion and celery to the pot. Sauté until the vegetables are soft, about 5 minutes.
Add Aromatics:
Stir in the finely chopped ginger and minced garlic. Cook for another 2 minutes until fragrant.
Add Spices:
Sprinkle in 1 teaspoon of turmeric and cook for 1 minute, stirring continuously.
Add Broth & Chicken:
Pour in the 6 cups of low sodium chicken broth and add the chicken breasts. Bring the soup to a boil, then reduce the heat to a simmer. Cook for 15-20 minutes until the chicken is fully cooked.
Shred the Chicken:
Remove the chicken from the pot and shred it with two forks. Return the shredded chicken to the pot.
Season the Soup:
Stir in 2 tablespoons of soy sauce and 1/2 teaspoon of black pepper. Let the soup simmer for another 5 minutes.
Add Rice:
Stir in the cooked jasmine rice and cook for an additional 5 minutes until everything is heated through.
Notes
For a creamier version, add coconut milk. Adjust the ginger quantity to your preference for a spicier or milder flavor.
