Ingredients

1/3 cup green beans

2 tsp dark soy sauce
1/4 tsp salt (or to taste)
Pepper to taste
Instructions
Chicken Marinade: Cut chicken into small pieces. Mix with corn starch, soy sauce, vegetable oil, and a pinch of baking soda. Set aside for 30 minutes.
Prepare Eggs:
Crack and beat 2 eggs. Heat wok, add 1 tbsp oil. Pour in beaten eggs, cook until fluffy (30-50 seconds). Break into small pieces and set aside.
Stir Frying: Add more oil to the wok. Saute marinated chicken for 1-2 minutes.
Push chicken to the side, add minced garlic, red onion, green beans, and carrot.
Stir-fry for 2-3 minutes until onion is transparent. Season with salt, mix well, and set aside.
Fry Rice: Loosen cooked rice. Heat wok, add 2 tbsp oil, put in rice. Stir-fry for 3-5 minutes. Add light soy sauce and dark soy sauce, mix quickly.
Combine Ingredients: Add chicken, veggies, and egg to the rice. Toss everything together for 2 minutes to infuse flavors. Add spring onion right before serving.
