Ingredients
1 ¼ lbs boneless, skinless cod fillets (4 fillets, about 5 oz each)
½ tsp salt, divided
½ tsp ground black pepper, divided
1 tbsp olive oil
1 tbsp unsalted butter
1 minced garlic clove
½ cup heavy cream (35% milk fat)
⅓ cup vegetable or seafood broth
1.5 tbsp fresh chopped dill (or 1-1.5 tsp dried)
1 tbsp lemon juice
1 tsp lemon zest
Optional: lemon wedges for serving
Instructions
Dry cod fillets and season with salt and pepper.
Heat olive oil and butter in a pan on medium. Fry the fillets for 3-5 minutes per side. Transfer to a plate.
Add garlic to the same pan, cooking for 1 minute.
Pour in cream and broth. Cook for 4-5 minutes, reducing the sauce.
Add dill, lemon juice, and zest.
Notes
- For a lighter sauce, use half-and-half instead of heavy cream.
- You can substitute white wine with chicken or vegetable broth if preferred.
- Serve with roasted vegetables or rice to complement the rich sauce.
