Description

Classic Fried Rice is a quick and flavorful dish made with day-old rice, mixed vegetables, scrambled eggs, and a savory soy sauce blend. It’s a versatile dish that can be customized with your favorite proteins and spices, making it a staple in Asian cuisine.

  • 3 cups cooked rice (preferably day-old)
  • 2 tablespoons vegetable oil
  • 2 eggs, lightly beaten
  • 1 cup mixed vegetables (carrots, peas, corn)
  • 3 green onions, chopped
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon black pepper
  • Salt to taste

Instructions

  • Prepare the ingredients: Break up any clumps in the cooked rice. Set aside.
  • Cook the eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the beaten eggs, scramble, and set aside.
  • Stir-fry the vegetables: Add the remaining oil to the skillet. Add the mixed vegetables and sauté for 3-4 minutes, until tender.
  • Add the rice: Push the vegetables to one side of the skillet and add the rice. Stir-fry for 2-3 minutes, ensuring it gets slightly crispy.
  • Combine and season: Add the scrambled eggs back to the skillet. Stir in the soy sauce, sesame oil, garlic powder, and black pepper. Mix well.
  • Finish: Stir in the chopped green onions, cook for 1 more minute, and adjust seasoning to taste. Serve hot.

Notes

  • Use day-old rice: For the best texture, use cold, day-old rice as it is less sticky and fries better.
  • Add protein: Enhance the dish by adding cooked chicken, shrimp, or tofu.
  • Adjust the seasoning: Add more soy sauce or sesame oil to taste.
