- 2 eggs, lightly beaten

- 3 green onions, chopped

- 1 tablespoon sesame oil
- 1/2 teaspoon garlic powder
- 1/4 teaspoon black pepper
- Salt to taste
Instructions
- Prepare the ingredients: Break up any clumps in the cooked rice. Set aside.
- Cook the eggs: Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium heat. Add the beaten eggs, scramble, and set aside.
- Stir-fry the vegetables: Add the remaining oil to the skillet. Add the mixed vegetables and sauté for 3-4 minutes, until tender.
- Add the rice: Push the vegetables to one side of the skillet and add the rice. Stir-fry for 2-3 minutes, ensuring it gets slightly crispy.
- Combine and season: Add the scrambled eggs back to the skillet. Stir in the soy sauce, sesame oil, garlic powder, and black pepper. Mix well.
- Finish: Stir in the chopped green onions, cook for 1 more minute, and adjust seasoning to taste. Serve hot.
