- 1 tablespoon olive oil
- 1 pound boneless, skinless chicken breasts, cut into strips
- 1 red bell pepper, sliced
- 1 green bell pepper, sliced
- 1 onion, sliced
- 3 cloves garlic, minced
- 1 teaspoon chili powder
- 1 teaspoon cumin
- 1 teaspoon paprika
- 4 cups chicken broth
- 1 can (14.5 oz) diced tomatoes
- 1 can (15 oz) black beans, drained and rinsed
- Salt and pepper to taste
- Juice of 1 lime
- Fresh cilantro, for garnish
- Avocado and shredded cheese, for serving
Instructions
- Heat olive oil in a large pot over medium heat. Add chicken strips and cook until browned. Remove and set aside.
- In the same pot, add bell peppers and onion, cooking until softened. Add garlic and spices, cooking for another minute.
- Return the chicken to the pot. Add chicken broth, diced tomatoes, and black beans. Bring to a simmer and cook for 20-25 minutes.
- Season with salt, pepper, and lime juice. Serve garnished with fresh cilantro, avocado slices, and shredded cheese.
Notes
- For a thicker soup, you can add some cornstarch dissolved in water during the last few minutes of cooking.
- This soup freezes well, so it’s perfect for meal prep.
