Description

Chicken Fajita Pasta is a delightful fusion dish that combines the spicy, smoky flavors of chicken fajitas with the creamy richness of pasta. This one-pan meal features sautéed chicken, colorful bell peppers, onions, and a blend of Mexican spices, all tossed with your favorite pasta in a creamy sauce.

Ingredients

– 3 tablespoons (45 ml) oil
– 3 chicken breasts, sliced
– 1 red bell pepper, sliced
– 1 green bell pepper, sliced
– 1 yellow bell pepper, sliced
– 1 onion, sliced
– 1 teaspoon (5 grams) salt
– 1 teaspoon (5 grams) pepper
– 1 tablespoon (8 grams) chili powder
– 1 tablespoon (8 grams) cumin
– 1 tablespoon (8 grams) garlic powder
– 5 cups (1.2 liters) milk
– 4 cups (320 grams) penne pasta
– 1 cup (112 grams) pepper jack cheese, shredded

Instructions

1. Heat the oil in a large pot over high heat.
2. Add the sliced chicken to the pot and cook until there is no pink visible. Then, remove the cooked chicken from the pot and set it aside.
3. Add the sliced bell peppers and onion to the pot. Cook until the onion becomes translucent.

4. Return the cooked chicken to the pot. Season with salt, pepper, chili powder, cumin, and garlic powder. Stir until the chicken and vegetables are evenly coated with the spices.
5. Pour in the milk and add the penne pasta. Stir constantly to prevent the pasta from sticking.
6. Cook for about 8-10 minutes, or until the pasta is cooked and the milk has reduced to a thick sauce that coats the pasta.
7. Add the shredded pepper jack cheese to the pot and mix until melted and well combined.

8. Serve the chicken fajita pasta immediately.

Notes

  • For a lighter version, substitute heavy cream with half-and-half or a light cream.
