A classic, creamy pasta dish combining tender chicken and fettuccine pasta coated in a rich Alfredo sauce made with Parmesan cheese, butter, and heavy cream.
Ingredients
1 (16-ounce) package fettuccine pasta (454g)
1 pound boneless skinless chicken breasts (halved crosswise if very thick/450g)
¾ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons olive oil
1 tablespoon unsalted butter
For the Sauce:
2 cups heavy cream (480mL)
½ cup unsalted butter, cubed (113g)
3 cloves garlic, minced (about 1 tablespoon minced)
½ teaspoon salt
½ teaspoon ground black pepper
1 cup grated parmesan cheese (90g)
Chopped fresh parsley for garnish

Boil the Pasta:
Bring a large pot of salted water to a boil over medium-high heat.
Add fettuccine pasta and cook according to package directions.
Drain well, reserving ½ cup of the cooking water. Keep warm.
Season and Cook Chicken:
Season chicken with salt and pepper.
Heat olive oil and butter in a large skillet over medium-high heat.
Add the chicken and cook until browned on both sides, about 7 to 9 minutes per side.
Ensure the internal temperature reaches 165°F.
Remove from skillet, cover to keep warm, and wipe the skillet clean.
Prepare the Sauce:
In the same skillet, combine heavy cream, cubed butter, and minced garlic.
Cook over medium heat, whisking often until butter is melted.
Whisk in salt and pepper, bring to a low simmer, and cook for about 5 minutes until slightly thickened.
Gradually whisk in parmesan cheese until smooth. Remove from heat.
Combine Pasta and Sauce:
Add the cooked pasta to the sauce, tossing to coat.
Use reserved cooking water as needed to thin the sauce.
Assemble and Garnish:
Slice the chicken breasts into ½-inch-thick strips.
Divide the pasta among bowls, top with sliced chicken, and garnish with chopped fresh parsley.
