Ingredients

| – 8 oz macaroni pasta | – 2 chicken breasts, diced | – 2 tablespoons Cajun seasoning | – 2 tablespoons olive oil | – 3 tablespoons butter | – 3 tablespoons all-purpose flour | – 2 cups milk | – 2 cups shredded sharp cheddar cheese | – 1 cup shredded mozzarella cheese | – Salt and pepper to taste | – Chopped fresh parsley for garnish (optional) |


Instructions

| 1. Cook the macaroni according to package instructions, drain, and set aside. | 2. In a bowl, toss diced chicken with Cajun seasoning until evenly coated. | 3. Heat olive oil in a skillet over medium-high heat. Add the seasoned chicken and cook until browned and cooked through, about 5-7 minutes. Remove from the skillet and set aside. | 4. In the same skillet, melt butter over medium heat. Whisk in flour to form a roux, cooking for 1-2 minutes. | 5. Gradually pour in milk while whisking constantly to avoid lumps. Cook until the sauce thickens, about 3-5 minutes. | 6. Reduce heat to low and stir in shredded cheddar cheese until melted and smooth. | 7. Add cooked macaroni and Cajun chicken to the cheese sauce, stirring until well combined. | 8. Preheat oven to 350°F (175°C). | 9. Transfer the mixture into a greased baking dish. Top with shredded mozzarella cheese. | 10. Bake for 20-25 minutes or until the cheese is bubbly and golden brown. | 11. Garnish with chopped parsley if desired, then serve hot and enjoy! |
