Ingredients
8 oz (225g) pasta (penne, rotini, or your choice)
1 cup cherry tomatoes, halved
1 cucumber, diced
1/2 red onion, thinly sliced
1/2 cup Kalamata olives, pitted and sliced
1/2 cup feta cheese, crumbled
1/4 cup olive oil
2 tbsp red wine vinegar
1 tsp dried oregano
Salt and pepper to taste
Fresh parsley for garnish (optional)
Instructions
Cook the pasta: Boil the pasta according to package instructions. Once cooked, drain and rinse with cold water to cool it down quickly.
Prepare the veggies: While the pasta is cooking, chop the cherry tomatoes, cucumber, red onion, and slice the olives.
Make the dressing: In a small bowl, whisk together the olive oil, red wine vinegar, oregano, salt, and pepper.
Combine everything: In a large mixing bowl, toss the cooked pasta with the vegetables. Add the feta cheese and pour the dressing over the salad. Mix until everything is well coated.
Garnish: Sprinkle with fresh parsley if desired.
